If you can catch your over-wintered leeks just as they send up their flower stem, you're in for a great treat. I call it heart of leeks. The flower stem is tender and tasty. In these are sliced leeks, the white center you see is the stem.
I harvested too many for tonight's pot of stew, so I put four quart-size bags of them in the freezer for later stir fries or cock-a-leekie soup. Yum!
